  • Zucchini Bread Recipe Ingredients 2 eggs, beaten 1 1/3 cup sugar 2 teaspoons vanilla 3 cups grated fresh zucchini 2/3 cup melted unsalted butter 2 teaspoons baking soda Pinch salt 3 cups all-purpose flour 1/2 teaspoon nutmeg 2 teaspoons cinnamon 1 cup chopped pecans or walnuts (optional) 1 cup dried cranberries or raisins (optional) Method 1 Preheat the oven to 350°F (175°C). In a large bowl, mix together the sugar, eggs, and vanilla. Mix in the grated zucchini and then the melted butter. Sprinkle baking soda and salt over the mixture and mix in. Add the flour, a third at a time. Sprinkle in the cinnamon and nutmeg and mix. Fold in the nuts and dried cranberries or raisins if using. 2 Divide the batter equally between 2 buttered 5 by 9 inch loaf pans. Bake for 1 hour or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10 minutes. Turn out onto wire racks to cool thoroughly. Makes 2 loaves.
  • My Favorite Zucchini Bread * 2 cups sugar * 1 cup vegetable oil * 3 eggs * 2 teaspoons vanilla * 2 cups shredded zucchini * 1/2 cup applesauce * 1/3 cup orange juice * 3 cups flour * 2 teaspoons baking soda * 1/2 teaspoon baking powder * 1 teaspoon salt * 3/4 teaspoon nutmeg * 1 1/2 teaspoons cinnamon * 1 cup chopped walnuts or pecans Preheat oven to 350*. In large bowl, mix sugar, oil, eggs, and vanilla. Beat until well blended. Add zucchini, applesauce and orange juice; stir well. Combine flour with next 5 ingredients. Add to zucchini mixture; stir well. Add nuts; stir gently to combine. Pour into 2 greased and floured 9in loaf pans. Bake for 60-70 minutes; till toothpick comes out clean. Let cool in pans 10 minutes. Remove from pans and let cool completely.
  • Makes 2 loaves. 2 c. sugar 3 eggs 1 c. oil 1 tbsp. vanilla 2 c. coarsely grated, peeled, loosely packed zucchini 2 c. flour 1 tsp. salt 1 tsp. baking soda 1/4 tsp. baking powder 1 tbsp. cinnamon 1 tsp. nutmeg 1/4 tsp. cloves 1 c. chopped nuts 1/2 c. raisins Preheat oven to 350 degrees. In large mixing bowl, beat eggs until frothy. Add sugar, oil and vanilla to eggs and beat until thick. Stir in zucchini. Sift together dry ingredients and add to zucchini mixture; mix well. Stir in nuts and raisins. Pour into two greased and lightly floured 9 x 5 x 3 inch bread pans. Bake 1 hour or until done.
  • 350 degree oven for 1 hr. makes 2 loaves Peel and grate enough Zucchini to make 2 1/2 cups. To that add: 3 eggs 3 cups sugar 3 cups flour 1/4 tsp of baking powder 1 tsp of baking soda, ginger, cinnamon, cloves and nutmeg 3 tsp of vanilla 1/2 cup of oil (you can sub. unsweetened applesauce for the oil is you'd like)
  • I'm not a very good baker, so I follow the recipie for banana nut bread and where I put three bananas, I trade three lagre zucchini and sunflower or pumpkin seeds for waknuts. It seems really like a dough, but I bake it slow, let it cool, put in the frige. When ready to serve, I slice it to fit in the toaster and butter it. wow is it good toasted !!!( I do the samething with my banana bread.
