I like a server who is good as his job. That means checking on my regularly, but no hovering like a nervous wreck. Somebody who converses easily, but doesn't act like he's my new best friend. Somebody who knows the menu and can make a confident recommendation when asked.

i'd want a server thats always paying attention and only comes when we need him/her to. the two other extremes are the worst!

A sever who is non intrusive but has a watchful eye for anything amiss. It is a learned skill.

Most of the restaurants I go to, workers all know me. So they just let me serve myself. Now the day they all let me pay myself, I'll have it made.......LOL.........M.C.S.

Yes, both of these are extremes of bad service. Truly good service is where the waiter knows exactly when he's needed, but without hovering over you the entire meal. The best service I've ever experienced was in a Chinese restaurant called Pearls in the New Delhi Hyatt Regency Hotel in India, where they demonstrated how to do this perfectly (and the food was great too).
