Because Genesis was the beginning of God's dealings with man, not the beginning of the Earth. There is a vast period of time between, "In the beginning God created the heaven and the Earth," (Genesis 1:1) and "And the earth was without form, and void; and darkness was upon the face of the deep. And the Spirit of God moved upon the face of the waters." (Genesis 1:2) The original Hebrew for, "And the earth was without form," actually read, "And the earth had become without form" The period of time between those events is undefined, allowing for science, not faith, to discover and determine the history of the planet.
