This is a GREAT recipe that my kids and finicky husband LOVE. It's not spicy so I serve with a homemade salsa (recipe follows) that is also pretty quick. Creamy Chicken Enchiladas 1 (10.75 ounce) can condensed cream of chicken soup 1/2 cup sour cream 1 tablespoon margarine 1 onion, chopped 1 teaspoon chili powder 2 cups chopped cooked chicken breast 1 (4 ounce) can chopped green chile peppers, drained 8 (8 inch) flour tortillas 1 cup shredded Cheddar cheese DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). In a small bowl mix the soup and sour cream; set aside. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and saute until tender. Stir in the chicken, chile peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned. Quick Salsa 2 (14.5 ounce) cans stewed tomatoes 1/2 onion, finely diced 1 teaspoon minced garlic 1/2 lime, juiced 1 teaspoon salt 1/4 cup canned sliced green chiles, or to taste 3 tablespoons chopped fresh cilantro 1-2 jalapenos, finely chopped (the more seeds you add, the spicier it will be) Place the tomatoes, onion, garlic, lime juice, salt, green chiles, jalapenos and cilantro in a blender or food processor. Blend on low to desired consistency. Hope you enjoy!!!

You could make Quesadilla's, Kabobs, Fajitas, pitas, or enchiladas, with both. If you think of won you like, I will get the recipe for you.

just cheat a little bit buy some ground chicken(or turkey) and substitute it for groung beef.I do this all the time for things that are heavily seasoned like tacos, sloppy joes or even spagetti(sp?)! it works well and you really won't even notice the difference except for much less grease with the meat.

Pizza Burgers ground beef, drain grease, add 1 can pizza sauce, simmer, add cheese, when cheese is melted put it on a bun. YUMMMM

ohhh just seen you said with Chicken melt 4 TBS butter in skillet, add small thing of whipping cream, and 1/3 C fresh parm. cheese boil for 2 mins, add chicken breast pieces, cool 20 mins In seperate pan cook noodles ( my fav is egg noodles) per pagake directions. When both are done combine. YUMM

Almond Chicken 2 Whole skinless boneless chicken breasts 2 tb Soy sauce 1 tb Rice wine 1/2 ts Sugar 1 ts Cornstarch 2 tb Chicken stock 1 1/2" ginger root slice; minced 1 Garlic cloves; minced 1 Egg 1 c Almonds; ground 6 c Peanut oil Pat chicken dry with paper towels. Cut into strips 1/2" wide by 3" long. Stir soy sauce, rice wine, chicken stock, sugar, cornstarch, ginger, and garlic together. Place chicken in marinade, turning to coat. Marinate at least one hour, turning chicken after half an hour. Remove chicken from marinade and drain on paper towels. Beat egg slightly with 1/2 teaspoon water. One by one, dip chicken pieces in egg and roll in almonds to coat. Let almond coated pieces set 15 minutes. Heat oil to 350. Fry chicken pieces in batches one layer deep until crisp, golden brown. Be sure to let oil come back up to 350 between batches. Drain on paper towels and serve at once.

Make kabobs. Kids love them and they are super easy. You can do them in the oven if the grill is not an option. Put the cubed meat and veggies on a skewer leaving some "stick" on each end and then put the kabobs across a glass 9 x 13 baking dish and bake. For easy clean up line the baking dish with foil.
