  • Wow, I was just trying to figure out the logistics of this and my suggestion is to start borrowing crockpots. I'd do this in about 5-6 batches and have the pots all going on low until time to serve. This will keep things hot, deal with the pot issue and help in the serving line (buffet, I hope) in keeping it from backing up. You should be able to get them all going within a relatively short period of time....probably faster than trying to get the huge pots going. You are also less likely to have scorched pots.   • Get your hands on a big roaster, one with a lid. Toss all the meat in there, cook at 350 stirring the meat every so often. Once the beef is cooked and drained add your sauce. For service use a crock pot on low. Let people help themselves. Since not all the sloppy joes will fit in a standard crock-pot at once. Keep the excess in the oven at no less then 155 degrees. If you don't want to get a big roaster, just buy one of those heavy foil roasters and cover it with tin foil.
