I think all cats do this, I have seen them do it before not recently but i know exactly what you are talking about. I could not tell you what they are doing, maybe its a sensory thing.

Yep, i have four cats and have had many more over the years and they all do it. Weird isn't it? I wonder why they do that... Aw well, it's cute, lol.

Flehming The Jacobson's Organ is a unique sensor found on the roof of a cat's mouth which assists cats in a highly complex interpretation of a scent and its location. The cat's mouth is slightly gaped, often with the tip of the tongue protruding, helping her draw air over the organ. The act is called 'Flehming'.The cat's brain then combines the information with that gathered from smelling with their noses. Flemhing is usually a specialized sense used for hunting and mating.

Your cat has a sixth sense out of the usual five: sight, smell, taste, touch, sound and then there's chemical communication. Humans have it too, but it's been mainly atrophied by disuse. Maybe that's good and maybe that's not.
