Since using Windows or Mac isn’t allowed in movies thanks to the infernal trademark issues, how do movie directors invent their own operating systems to use on any computer in a movie?

I've seen MANY movies use Mac products. Mac must pay for the priviledge of being seen in the film. For example, in the recent film "Untracable", all the computers that appeared were Macs. I believe the office computer in "Ironman" was as well.
