The redness is probably irritation from the scratching or nibbling, but the ammonia smell could be urine getting in the coat, which would irritate the skin, causing her to feel the need to scratch or bite in that area. If she is getting urine in her coat regularly and enough for you to smell it strongly, there could be bladder or kidney problems. Dogs will pick one area to scratch or bite for a lot of reasons, from an itching 'hot spot' to an allergy to obsessive behaviour induced by stress. Best to get your girl to the vet and find out which it is, so you can treat it and relieve her discomfort and your concerns.
