A poltergeist manifests itself by moving or influencing physical objects. A ghost simply appears (and then disappears).

Some feel that a ghost is a living (or once was rather) soul whereas a poltergeist is a manifestation of negative energy left by a gruesome death. Others feel that a ghost is a passive soul of the departed (dead) whereas a poltergeist is a non passive (or aggressive) soul of the departed that can (or will) manipulate the 'living' world around them.

The rule of thumb is, if you see it, it's a ghost. Poltergeists are generally thought to be spirits that don't appear but move things or make sounds; the most compelling theory regarding them I've heard is that they're actually some sort of psychic manifestation of a very troubled living person.
