I usually start with some kind of broth cooking them half-way and take half out into another pan. continue with the first and add other aromatics like caramelized onions and simmer. the second I drain off the liquid and put into the oven on low like for a cake (350 f) to finish and keep the course texture, then add some larger vegies like carrots and the like. put the first in a shallow bowl and spoon the latter on top like in a mound so it does'nt submerge.
