Maybe Michaelango was uncomfortable looking at his model there, and was a little uncomfortable with sculpting that part, so he just quickly chipped away, said "Oh, close enough," and moved on.

Just art, and a reflection of the culture it was carved in. The David also has a Grecian hairstyle. (the existence of a representation of any Jewish patriarch or king is a cultural no-no for Jews anyway!)
