• Paula Deen is on Food Network, she is a down home southern cook.Her show is Paula'Deens home cookin or whatever.lol. Wolfgang Puck is an amazing austrian chef. :D you should check them out, oh and Paula has a restaurant in Savanna GA, (which I have never been to, unfortunately) called Lady and sons. Wolfgang has one in like Atlanta called Wolfgang Express

• i agree rick steins fish and chip shop is great.couldnt afford to eat in his seafood restaraunt but when i was there you could pick up a lovely poster with the weeks menu on the back from outside,and just leave a donation to charity! it hangs on my kitchen wall to this day

• I never noticed that, Debris...many so-called knowledgeable chefs put their hands in things..pinch of salt all the time..further, they cut away a lot of veggie or fruit unecessarily..they throw away pot liquor in which veggies are steamed instead of saving it for soup..they simmer a chicken in water, toss in veggies and never the skim the fat..the proper way is simmer the chicken..remove it..strain the broth..cool it..refrigerate overnight..peel off the fat on top..then proceed to make your dish. They never discuss reading labels..they use crushed garlic out of a jar (ewwww)..one idiot even had the never to say that farm-raised fish was good for you..what a crock of sh**! I could go on and on but you're probably already bored! :(

• No Rosie - you are right. I got given a Delia Smith recipe book a couple of years ago and the amount of salt she uses in some of the dishes is horrific.

• There are a few rare exceptions..there is a gal...Ellie Krieger (sp?) who is very health conscious. A few from time to time will toss out one piece of valuable information..for the most part they live inside their kitchens with no knowledge of health considerations..I get really irritated..they are supposed to be the people from whom we learn helpful things..I should not be more aware than they are..it just isn't right! :(
