  • Out here (Az./N.Mex./Texas) there is no "Pork", this being cattle country, but there was always Beef left over from the nights BBQ which was diced up for "Breakfast" combined with Chiles & Salsa for a "Stick to Ur Ribs Breakfast"!!! Denver's location & working arrangement saw "Pork" brought in on the Rail Road from the upper Mid-West who featured & made Famous the "Denver Omelet" for it's "Tourist Crowd"(National Parks) (Upper Crust & All). John
  • No pork in AZ? Don't you have markets? Leftover BBQ beef in my eggs? bleah. There is no difference between the two, actually, both carry the essentials: eggs, bell pepper, onion, and ham. There are more involved glorifications of this, where you can bacon, Canadian bacon, red bell pepper, or any other peppers for that matter, but the basic core is always there. You'll notice if you go to a restaurant, either one or the other may be on the menu, but not both. Around the places I grew up, it was usually referred to as a Denver, but occasionally you'd see "western." YMMV, it's probably mostly a regional thing.
  • Here in the South the only difference I have ever seen between a Western Omelet and a Denver omelet is on menus when it listed as a Denver omelet it has a slice of cheese on top when served. All the other ingredients are listed as the same: eggs, ham, onions, and green pepper.
