i think because often times in a job you have to do things that will make you nervous and they want to know if you can hide it. they want people who can be confident in selling their product (or whatever)

Good question. You would think allowance would be made because interviews are by their very nature nerve wracking. I'd say a good interviewer should overlook it.

Employers don't like hiring people who show nervousness when under pressure. The result of doing so may cost them time, money and mistakes.
