That would depend on what result you want to turn out, and where abouts the person you want to affect is sitting. No, it may not answer the question, but entire books could be written about the question as it stands - it's too vague.

best not to really... again, it depends on if you're playing real or online poker. real poker, there are several ways, including noticing the cards values, either whilst shuffling or dealing.

There are a couple ways to cheat while dealing a hand of poker. Dealing seconds is allows the dealer to deal the cards out, but to keep one specific card on top of the deck, to be used as needed. Someone who is skilled at this type of cheat will look so flawless that you could stare directly at the deck as they are dealing the cards and wouldn't be able to see that the top card never moves. Bottom dealing is similar to second dealing, in that the cheater would have a few cards on top of the deck that he/she wanted to save for later in the hand. The difference is that instead of dealing the SECOND card off the deck, the cheater deals all the cards off the bottom. It could also be reversed, where the cards are dealt off the top, until the specific card(s) were needed from the bottom. A cheating dealer could also false shuffle. There are a few ways one could do this. He could always keep one or two cards on the top of the deck, shuffling in a way that never disturbs the position of these cards. The same could also be done keeping card(s) on the bottom of the deck. A sophisticated false shuffle involves setting up an entire hand and never actually shuffling the cards at all, while still appearing to shuffle properly. The method for how this is done is kind of hard to describe, I did a search on Yahoo! Video for "false shuffle" and found a couple videos.) Something else, used in conjuntion with these methods, is the false cut. The least sophisticated way of doing this is to have the player next to you cut the deck, and when you reach over to pick the bottom half up and put it on top of the top half (the right way) the cheat simply picks the two halves up and puts them back together the way there were before the cut. The only way you are getting away with this is if noone is watching, or if all the other players are extremely intoxicated. A (significantly) more skilled player can pick up the bottom half, and appear to drop it onto the top half, but actually drop the bottom off to the side and quickly shift the top half up to the top, all in one motion. Done right, it is very hard to detect. A less sophisticated way for the dealer to cheat is to give himself an extra card, which may or may not improve his hand. Of course, then you have the problem of ridding your hand of the extra card, the most likely way would be to simply toss it under the table unnoticed. This method is less effective, but easier to pull off. All these methods of cheating can be combated, for the most part, by employing proper safegaurding techniques. The dealer should always use a cut card or joker on the bottom of the deck to protct from dealing from the bottom, or peeking at the bottom. The cut should also be done correctly. When the guy next to you deals, cut the deck directly ONTO the cut card or joker, the place the bottom half on top your self, and sorta square up the deck, so that the two sections are not distinguishable. Third, stop playing poker with a bunch of no good cheaters, or play in a casino type game where cheating by the dealers is highly risky, difficult, and unlikely.
