pick something they're good at,
have them teach someone who isn't as good, but willing to learn. upon completion, positive reinforcement is given in the form of praise. one topic at a time, and they realize they're more apt then they thought.
or teach them to bartend...but then they might turn out like me! woah... blossom!

First of all, it's pretty mean to just assume someone lacks self-confidence. I hope that the person TOLD you that he or she lacks self-confidence and you didn't just make that up off the top of your head.
Now that that's out of the way, you can just compliment the person on his or her achievements, attitude, etc. That encourages many people, whether they are confident or not.
Only give people compliments you truly mean. Try to stay away from giving false compliments designed to help a person feel better about himself or herself. Those compliments really suck.
