Do two people have to be on the same IM service to chat together? Or can one person use AIM, for example, and another use Yahoo IM?

You have to be on the same network to chat. The answer to your second question is 'no'. You can use third party IM programs to connect to more than one network at a time, but you still need to connect to AIM for example, to chat with someone else on AIM.
