The answer here is quite simple. When we are loading and fueling planes, the weight of the aircraft is a very important number for the pilots. The weight of the aircraft determines the amount of thrust needed, among other things. Thinking of fuel in terms of its weight and not quantity makes this easier. It's one less mathematical equation that the pilot has to perform before flight. In case you were wondering, one gallon of JET-A weighs in around 6 lbs. Fuel consumption is thought of in this manner too, ie: how many pounds of fuel will it take to get me from A to B plus some.
