I went to Tampa the other week and I tried booking online. It was pretty easy, just browse the site, look up the rates and available tee times then book. These online providers give you a call or email if they've confirmed it, if not, they suggest a few tee times you can get... It's so nice to just show up at the course, check in, and head off to the first tee. I can recommend this site: http://www.floridagolfing.com

It is as easy as phoning in your reservation, and most places keep up to date on it so I have never had a problem with the few times I've done it.
