  • This is a hard one. I don't know whether Ghandi ate animal by-products or not. OK, let's assume he didn't. Appetizers: a typical Roman dish called "Frittura alla Romana". It's floured and deep fried assorted vegetables cut in little cubes (cauliflower, potatoes, zucchini, eggplant and cubes of Ricotta cheese). I would fry the cheese cubes in a separate pan and serve them on a separate dish. Entree: penne all'arrabbiata. That's just tomato sauce, garlic, olive oil and red hot peppers. Main course: lentils (my recipe is to slow cook them in broth - vegetable in this case), garlic, a little tomato sauce, carrot and celery. I spread this on hot, toasted bread and spinkle virgin olive oil on top. Side dish: salad with lettuce, avocado, corn, walnuts, slices of apple, seasoned with olive oil, vinegar, salt and pepper. Desert: a hallowed out watermelon, filled with friut salad, livened up with the addition of raisins and chopped nuts, flavoured with rasberry/stawberry sauce. Wew! I need a rest!
