In countries where frog's legs are eaten, why do they not eat the rest of the frog?

When you buy or order frog legs you're actually getting half of the frog's body but they’re called frog legs. A frog is cut near the base of its spine and served in such a way that it looks like your eating half the frog. The legs, which have more meat, are served as a pair. Not much meat on the rest of the frog. Maybe there is something to the phrase “ you are what you eat”. “Croak”
