  • Do you get canker sores often? It could be due to any acidity in pineapples. "Maturity Indices Change of shell color from green to yellow at the base of the fruit. Pineapples are non-climacteric fruits and should be harvested when ready to eat.   • Because the acid in the pineapple changes the pH balance of the inside of your mouth making more susceptible to canker sores. If you cut back on the pineapple, they should disappear.
