Do you know anyone at work, in school, or your local gym that you see alot that never spoke to you and then one day they watch you as you leave and then say "Goodbye see you later!" ? If so, why do you think they did that?

Yes it has happened quite a few times since I have been going back to the Gym. I assume that it is because I am becoming a familiar sight to the person and they know they will see me again on another occasion.

They probably have noticed that your paths cross frequently, and would like to get to know you and find out what else you might have in common. Or maybe they think you're cute and just became available. Who knows? Strike up a conversation next time, you'll get your answer before long.
