  • Baking poweder will add fluff to your cookies. and you will regardless get a little spread, and rise. heat expands substances, but after you cool them, or cool them quickly putting them on the wire rack and place in freezer, they will shrink some
  • You are looking in the wrong place. If you replace some of the butter in your recipe with shortening, they will spread less. Think about what happens to each when they get heated just a little. Butter melts and spreads at a low temp. but shortening can hold it's shape much longer. Also if you chill your dough very well, the fat is colder and will hold it's shape longer. So a bit higher temp and colder dough can help keep cookies the same shape.
  • baking powder makes them cakier.(is there such a word?)
