It's not only named after the greek goddess, but also the verb nikaw, which means "I win." More technically, this was often used in a noun form nikh, meaning victory.

The Greek Goddess, Nike, symbolizes victory. There is no better name to chose for a sporting goods company than something, or in this case someone, who symbolizes victory. In fact the Nike Swoosh symbolizes the goddess' wings. If you owned a sporting goods company, wouldn't you want people to think that if you wore their stuff, they would have victories?
