I think it depends on the dish. Adding alcohol to a hot skillet with evaporate off the alcohol. Some things with less intense heat - like rum balls - might still have alcohol in them.

If your cooking on the stove the alcohol burns off. If your baking it's still in there. At lease that is what they say on the cooking shows.

The heat from the cooking process should evaporate the alcohol and just leave a flaor behind.

If you cook it for a long time reaching a certain temperature or if you flame it, yes, MOST of the alcohol dissipates but there is the tiniest of traces of it remaining.
