How can I know that causality actually exists? After all, we cannot predict the future. Could it be that all of the "cause and effect" that we experience is merely correlation and will eventually unravel and give way to chaos?

We know it exists by simple examples like: If I eat then I'll need a poo. If I get drunk then I'll feel sick etc. It won't necessarily unravel but get destroyed. The planet Earth is doomed to be destroyed by the Sun as it grows in about 5 milliard yaers, the universe is growing but at one point will shrink into nothingness (The Big Crunch).

Start with something small and experiment. Take a ball and throw it in the air. It goes up and down. Let it lie on the ground. It just lies there. Repeat this until you are convinced that you have enough sample. Try it with other actions and commonly predictable reactions. Who knows what will eventually happen in the cosmic enforcement of this law in the realm of physics. There are certainly variables of which we are not aware.
