Why is the FLDS church described in the media as practicing polygamy, when they really only practice polygyny?

It's just the way of the world. Most organisations that call themselves fundamental or fundamentalist are male centred to the point of total selfishness. It has always seemed strange to me that some of the relatively recent religions based on a perverted form of Christianity have, at their core, a deep misogyny which displays itself in the 'right' to have multiple wives.
