I once worked in the deli at a supermarket and they would take all the end pieces of bologna, salami, ham ect. and make ham salad with it. That was in the 70s. Is this still done today?

I worked in a deli after high school and we would cut it up into cubes and package it for salads and things. This was in the 80s.
