That was the way I was taught to do it, it helps prevent the wrong change being given. saying "ten" when its in your hand, not in the till gives the customer chance to say "hang on its a twenty" etc. once its in the till it is too late.

Yes, you should always say out loud the denomination of the bill they give you and then count back the change. It's not so much for the customer's benefit than it is to keep customers from saying you gave them incorrect change. If you count back the change then there's never any question of it being correct or not.

No i dont i leave it on top of the till then give them their change before putting it in the till.

surely there is a facility on the till whereby you have got the subtotal, you put in that you have received e.g £20 and it works out the change for you. That way, you know the right change has been given and the proof is on the receipt.
