How come when you add root beer soda to vanilla ice cream it foams up so much?

The microscopic bubbles in the ice cream act as nucleation sites which trigger the formation of large bubbles of carbon dioxide. It's kind of like the same thing as when you add Mentos to a two liter bottle of soda, only not as intense.

What teal said - But I have found that adding the ice cream AFTER the soda it doesn't foam as much
