I like the taste of a well cooked (not overcooked) steak, rather than a red, runny one. To me, red in the middle means undercooked, and the possibility of disease...it also tastes insipid...just my point of view.

I disagree with those who believe a steak loses flavor as it's cooked. I've always found rare or medium steak to be bland, while well-done or somewhat more than that is far more flavorful.

Any time I've had a steak well done, it's been dry, tough and loses it's flavor. I don't like it bloody red, but it's got to still be juicy and have some pink in the middle. I prefer mine cooked medium.

Rare to medium youll be tasting more of the juices, medium to well youll be tasting more of the meat itself, its a matter of personal preference. When I order a steak I order medium well.

Yes it does. And, it's best to let a steak sit for a few minutes before you cut into it ... no matter how you cook it ... that allows the juices to redistribute through the meat and not all run out at once when you cut it.

Sure does...at least in my opinion. It cooks all the juices out of it and then you have to add steak sauce to give it flavor. I eat mine very rare and add nothing but salt.

Well, yes it does. Some like the change. I do not particularly. Well done seems to be more a Texas and New Mexico taste. I like my steak a little more 'natural'...i.e., 'rare' (smile)

imagine a slice of bread left out on the counter getting air hard. does it change it ? steak over cooked is about the same, so yes.

All I know is steak taste and smell pretty bad w/o the help of good old herbs, spices and steak sauce. . This goes for every meat.
