  • To prevent it from turning brown (which is just the guacamole oxidizing), I add a decent amount of lemon juice or lime juice. This does not prevent it but slows it down. I would also imagine that putting a layer of plastic wrap so that it is touching the exposed surface of the guacamole would stop the color change because the guacamole could no longer recieve oxygen from the air. If you needed to keep prepare it around a week ahead you could pour unflavored-unsugared geletain over it to keep out all air and form a seal.
  • Yes, lemon juice will help slow the processof browning. The chemical in the lemon juice that does this is ascorbic acid. But limes might work better since they have more of this acid than lemons. The same will slow apples from turning brown too.
  • Try putting the avocado stone back into the made guacamole.
  • Yes, putting lime or lemon juice in the guacamole, placing the stone back into the prepared dip (leaving it half uncovered seems to work best), and placing plastic wrap directly onto the top of the dip (make sure you get all of the air out from under the plastic) will all help to keep the avocado from turning color. I have actually been able to keep mine for up to a week using all of these together. By the way, the color change doesn't mean it is no longer edible, it just looks nasty.
  • Lemon or vinager. Something acidic. Or if you cover it with plastic wrap and make sure that all the air is out sometimes that helps but usually the lemon thing is the best way.
  • Try grilling the avocado, cut side down, prior to making the guacamole. The heat will deactivate the enzymes which turn the guacamole brown. Also, you get a nice smokey flavor from the grill. About 3-5 minutes is perfect for the grilling time.

  • I have made guacamole and used lots of lime juice, and put the stone or pit back into the bowl and used an airtight container and still got the brown discoloration. I didn't have any plastic wrap to try that so next time i will make sure to try that as well.
