I'm interested in learning about Christianity, but have no desire to become one. What are some good resources I could use?

Read the Bible.

There are a lot of books which summarize the topic. I like C.S. Lewis, he writes clearly and passionately: "Mere Christianity" is one of his hallmark introductions to the religion. Also, the best general introduction which isn't limited to just Christianity is Huston Smith's "Religions of the World".

Not AB. I would go to a few different Christian churches to get a full-on experience. The Bible can be interpreted in so many ways (often laughably so) that I doubt you would get a real grasp on it without speaking with different people who have different interpretations. Good for you, it's great to explore alternative ideas!

Read everything you could get your hands on about it, especially how it all got started. That should do it.
