What will be more beneficial to me: getting a "real" summer job at minimum wage and getting experience in the workplace or doing freelance work for twice the salary but not getting typical workforce experience?

All experience is beneficial no matter what it is, even volunteer work. Go for which ever one you like better.

People get ahead in the workforce by being able to sell themselves and their experience. The better you are at putting the right "spin" on the experience you have, the more you will get ahead. This does not mean the better liar you are. Many people mis-use the concept of putting the best spin on things as an excuse to prevaricate. Example: Activity: mowing lawns - buying mower, leaf blower, etc. Spin: "I performed environmental services in my neighborhood, and developed a network of community contacts. It was reasonably profitable and I was able to build up an inventory of capitol investments".
