Why do restaurants want customers to return plastic deli tray when they can be easily replaced?

    Depending on the type you are referring to, it's probably still cheaper for them to wash and reuse them then to buy new ones - especially given the huge load capacities of some of the commercial washers. As an added bonus, it's also more ecologically sound to reuse or at least recycle them than it is to just dump them into the garbage.
