Sweet Onion and Cucumber Salad Seedless hothouse cucumber, sliced thin Vidalia or other sweet onion, sliced thin Salt Sugar Rice vinegar Olive oil Spread the cucumber slices in one layer on a cutting board or other surface. Sprinkle liberally with salt. Allow to sit for 20 - 30 minutes, then gather up the slices in a clean towel or paper towel and squeeze as much liquid as possible from the cucumbers. Meanwhile, mix a sugar water solution of 1/2 tsp sugar per cup of cold water. Soak the onion slices in the sugar water for 15 - 30 minutes and drain well. Pat dry with a paper towel. Mix the vinegar and oil in a 1:5 solution and whisk to emulsify. Arrange the onions on the plate, then top with cucumbers and drizzle sparingly with the dressing mixture.

This is a favorite around our house. I slice 4 or 5 cucumbers and 3 or 4 onions. I put them in a large tupperware container. I then add 3 cups of white vinegar 1/4 cup sugar 1 tsp of garlic powder salt and pepper to taste I then cover and shake the container. After shaking I taste test the liquid to make sure it is sweet enough to counteract the vinegar and adjust if necessary. Then I cover tightly, and refrigerate. I shake the container (upside down) every few hours. Let set overnight.

i'm eating this right now! it's my own recipe, heavily influenced by my mom who is no longer with us so i can't ask her the exact recipe. This is what i do and i love it. Chop up 4 or 5 cucumbers (peeled). I chop them in thick 1-inch sliced and then those in half, so they are half circles. Thick, like a perfect bite-size. I take a big red onion and chop that in half, then slice it so they are thick crescent shapes. I only use half of the onion to 4 cucumbers. I use the red onions, not sweet onions because the dressing mixture has sugar and it sweetens over time. Also, i don't even eat the onions, i just like the flavor it adds to the mixture. I only eat the cucumbers. Although, my mom used to slice the onions really really thin, and that way, i would be able to eat them. Maybe i should do that instead. I add that to a mix of apple cider vinegar (or red wine vinegar or white vinegar or a mixture of two, or a mixture of all three). A splash of virgin olive oil, a big scoop of sugar, and a good shake of coarse black pepper (i don't use salt). If its way too strong, i add some water. But not toooo much. You gotta experiment to find out how much to use. I don't even use a measuring cup. But if i had to guess, it would be about 2 cups vinegars, 1/4 cup oil, 2 tbsp of sugar, a good shake of pepper. The longer you marinade the cucumbers the better! I usually make the big batch of 4 or 5 cucumbers and store it in tupperware or old spaghetti jars i saved. Since the rest of my family isn't interested, i get it all to myself. i love my recipe.
