Is it fair that a company you work for show record profits for the year, yet come back at performance review time and say wage increases have been reduced for the sake of the company?

I would say not, but unfortunately that is the prevailing mentality amongst profiteering companies, disregard the individual, regard them as commodities and pay as little as they can get away with !
