    A shark's nose is very sensitive and apparently they go into a sort of orgasmic swoon if their noses are touched. I haven't tried it myself and won't recommend it.

    I'd surmise they do not get calm, but more so "confused," until instincts kick in and they turn to swim away. That may take a moment or two, but "calming" is a nerve reaction, like that of a dog or cat that is petted. A domestic animal has a history of interaction with man to where "human touch" is expected and accepted. A shark's instinct and body, like a wild bear, does not know this human contact, and probably wouldn't accept it. The momentary lapse just before the "turn and swim" is more of a confused state then a calm state...but what do I know? I've yet to pet a shark, or a bear, or a badger, or a snake, or a...
