If you want beef for more than just a weekend barbecue and for feeding a whole family, consider a split side of beef. This is a quarter of a beef and may last a family of four about six months.
A quarter beef will vary in weight depending on the weight of the whole beef. On average a split side at hanging weight is about 150 lbs., which makes the amount taken home around 100 lbs. Many people do not realize that what the hanging weight to live weight ratio is.
Cost is usually the reason most given when asked why people buy a split side of beef rather than just going down to the local grocery store. Consider that a 1/4 inch cut steak at the store can cost up to $6 per lb. and then look at the quarter beef in your freezer that only cost, on average, around $250 for the whole 100 lbs (as of 2010).
When taking home your split side of beef some of the cuts of meat you will receive include: roasts, stew meat, short ribs and soup bones. A variety of steaks are available such as rib steaks, sirloin, T-bone and chuck steaks as well as cube steaks. And, of course, ground beef.
In this day and age of going organic, much of the split side of beef that ends up in the butcher for sale comes directly from wide open green pastures with no growth hormones added. It still goes through the same USDA regulations as beef from the feed lot.
