  • I make yummy choc-chip biscuits (cookies).... 1/2 cup brown sugar 1/2 cup white sugar cream sugar with 125g butter add half teaspoon vanilla essence and 1 lightly beaten egg. add 1 3/4 cups sifted self raising flour, 1/2 teaspoon of salt. Mix in 125g of choc-chips (and 60g walnut/macadamia nuts if you like them - I personally add more choc-chips and no nuts). Shape into small balls (about 2 teapsoons worth), and put into a pre-heated oven (180 degrees C) and bake fro about 10 min. They will be soft when they come out of the oven, leave them on the hot tray for five minutes before placing on cooling rack. Enjoy when cool.   • Italian corn-meal cookies are awesome. 3/4 c. butter (room temp) 3/4 c. sugar 1 egg, beaten 1 1/2 c. flour 1/2 c. cornmeal 1 tsp. baking powder 1/4 tsp. salt 1 tbsp. vanilla 1/2 tsp almond extract In large bowl, cream together the butter and sugar. Add egg and mix well. Add the rest of the ingredients and mix well. Drop dough by teaspoons onto greased cookie sheet about 2 inches apart. Bake at 350 degrees for 12 to 15 minutes or until lightly browned. Yield: 3 dozen. I actually use a cookie press for fun shapes but you don't have to.
