If you've been invited to a Latin American wedding recently, you look forward to the delicious spread at the reception---and you may even get some recipe ideas to take home with you. Pastelitos, small pastries filled with vegetables and seasoned meat, are served before the main course. Puerto Ricans and some Argentineans make small wafer-like breads called arepas, which can be dipped in meat or sauce as an appetizer. The main course is often some form of stewed meat (usually beef) with a side of seasoned beans, rice and plantains. Some cultures prepare a dish called "ropa vieja," made of shredded meat, rice and vegetables. For dessert, a cake made from nuts and dried fruit is prepared and soaked in rum for additional flavor. Flan, an egg-based custard flavored with vanilla, is a traditional dessert that is served with caramelized sugar on top. The drink that is used to toast the bride and groom is often sangria---sweet red wine that has been infused with berries and citrus fruits. Some Latin American families send their guests home with desserts such as churros, which are Mexican doughnuts sprinkled with cinnamon, or picarones, which are pumpkin doughnuts.
