The U.S. Army Field Manual states that worms are an excellent source of protein and can be eaten after being soaked in water for 15 minutes. This removes the dirt from their systems. They also contain high levels of omega-3, which is shown to lower cholesterol.

On the Other: They Can Be Difficult to Consume

Earthworms eat dirt, and if they are purged improperly their digestive tract will still be full of dirt, affecting the taste. They also are very small and capturing them can be easier said than done unless they have surfaced because of rain.

    Bottom Line

Yes. Earthworms are safe to eat, but the effort involved in obtaining and preparing them mitigates their value as a viable food source except in extreme situations.
