the "crack" is actually cavitation or popping a bubble... it is a release of pressure that built up in that joint... why it actually feels good is probably due to the new space you have created, OR the chemicals you release from the pop, OR a psychological effect from hearing that sound, OR a combination... more research needs to be done for a definitive answer to your question, however spending time researching this could be considered a waste...
just enjoy the pop until some researcher finds that it does in fact speed up the arthritic process (which has not happened yet to my knowledge)
