Why does the sun take just as much time to rise and set over a tiny island as it does an entire continent?

It doesn't. That's why large continents have multiple time zones. From the point at which you are standing however, then sun will take just as much time from YOUR perspective if you are standing in Kansas, or Hawaii. Your position is fixed, and the distance between you and the horizon is the same no matter how big an object you are standing on.
