Watching the world series. Why do catchers fan their crotches with their fingers?

Hand signals. LOL. They should do it in another area it seems.

They do it between their legs to prevent anyone, other than the pitcher, from seeing the sign.
If you watch enough baseball, you'll notice the catcher run out to the mound more often when there is an opposing runner on second base;the catchers signs are in his line of sight, and he in turn can signal the bench, who in turn will signal the batter.The catcher will verbally tell the pitcher what pitch he wants him to throw, and where to throw it.

You'll also notice the catcher, when giving the sign, look at the batter, to be sure he's not watching.

Don't they know the cameras are on them, opposing coaches watch them and they probably tell the opposing players what they're signaling via wireless receivers?

Actually they do know that.
That's why there are no television monitors in the dugout. A player has to go to the clubhouse to see a video of his at-bat.
