I think once you convert it to a pdf you will no longer be able to use the functions. You could use the protect worksheet option and the functions would still be useable, if that serves your purpose.

It would mostly depend on how you do the conversion, I think. That is, if you have Adobe Writer you have a lot more flexibility in the document that you can create. If you just use the Adobe add-in for Excel (however that works), then I think it just converts the Office document into a static page. I have seen Adobe "forms", so I know that THAT possibility exists, but I've never looked into how those forms are created, edited and used.
