If you hard boil your eggs the way I do, some cracks occur in the shells, and water enters through these cracks. As the water is boiling when it enters the egg shell, it cools when you put the egg in cold water (as does the shell), the shell will contract with the cooling, but the water will expand with the cooling, thus causing the explosion you refer to.
