If I was Chinese and brought up to use them then probably I would, but why try to use something that does not fit into our own food culture and is less effective? When I visit an Indian restaurant, neither do I eat this by picking the food up in my hands. A knife and fork is much easier.

My co-worker asks for chopsticks when I pick up his lunch at the take out but I never see him using them... hmmm.. wonder what he is doing with those chopsticks. Me, no, I prefer a nice stainless fork.

Why is it that chinese people use chop sticks when there staple food is rice?

No. Keep in mind that in parts of Asia, chopsticks are used as a way to guide food to the mouth, with the bowl brought to the face. Chopsticks are not very efficient if lifting the food from the bowl or plate.

I did once and all the chinese people starting laughing at me. I was slightly embarrassed and just used my knife and fork after that :)

Absolutely. And I won't eat at a Chinese restaurant that puts out forks and knives by default, that means they're not authentic, and they're serving chow mein and moo goo crappo.
