USe the last salary that you received in your professional duties. (Don't include your night job). What they want to see is if you are in their range or if you are overpriced for them. If you go too low, they will think that you were not of value to the last organization. Be realistic and best not lie. Temporarily unemployed should not be a problem. Chronically unemployed is.
